Paris based management consultant owns half a hectare of Pineau d’Aunis
in the hamlet of Bois Freslon just outside Ternay. The vines are all worked to the
principles of biodynamic farming. Chidaine visits the farm at the weekend
and rumour has it he harvests only at the weekend too. He sells most of
his production to bars and cavistes
in the capital. Regrettably, Philippe had forgotten our appointment during
my week long research in the region, but I look forward to tasting them at
some point in the future.
